Recipe:

Ingredients for the Lava Cakes:

  1. 100g of Dark chocolate (recommended 70% cocoa)
  2. 100g of unsalted butter.
  3. 2 large eggs, and 2 egg yolks.
  4. 50g of caster sugar.
  5. 25g of plain flour.
  6. 1 tsb of vanilla extract.
  7. A pinch of salt.

For the raspberry coulis:

  1. 150g of frozen raspberries.
  2. 2 tsbp of caster sugar.
  3. 1 tsp of lemon juice.
  4. 1-2 tbsp of water (optional, for consistency).

For serving (optional) why not try these garnishes:

  1. Fresh raspberries.
  2. Fresh mint leaves
  3. Icing sugar.
  4. Whipped cream or vanilla ice cream.

Step by step instructions:

Make the raspberry coulis:

  1. Combine raspberries, lemon juice and sugar in a saucepan over medium heat.
  2. Cook for 5-7 minutes until the raspberries breakdown.
  3. Strain through a sieve, with water for a Smooth coulis and set a side to cool.

Prepare the baking tray:

  1. Preheat the oven to 200 Celsius or 400 Fahrenheit.
  2. Grease 4 ramekins with butter and add cocoa powder.
  3. Melt chocolate and butter until smooth.
  4. Whisk eggs, yolks, sugar, and salt until frothy. Fold in the chocolate mixture.
  5. Add flour and vanilla extract fold until combined.

Bake the cake:

  1. Pour batter into ramekins, around (¾ full).
  2. Bake 10-12 minutes until edges are set, but centers are gooey.
  3. Let cool 2-3 minutes for cooling and before serving.

Assemble the Deconstructed cake:

  1. Spoon Lava chunks onto plates.
  2. Drizzle with raspberry coulis.
  3. Garnish with mint, fresh raspberries, Icing sugar and optional whipped cream or ice cream.

Tips for the perfect Lava cake:

  1. Use high quality chocolate for the richest flavour.
  2. Dont over-bake, centers should be Molten for the best texture.
  3. Make the coulis in advance, to save preparation time.
